Craving a treat? Recipe alert: Peanut Butter Frozen Yogurt Fudge Cups

Ingredients

  • 1.5 Tbsp Special Dark 100% Cacao
  • Fudge:
  • 1 Tbsp Honey
  • 2 Tbsp All Natural Smooth Peanut Butter ( no added sugar, low sodium)
  • 1 Tbsp Unrefined Virgin Coconut Oil
  • 1 Tbsp Powdered Peanut Butter
  • Stevia to sweeten
  • 1/2 teaspoon Vanilla Extract
  • Froyo:
  • 1/2 Cup Plain Nonfat Greek / Bulgarian Yogurt
  • 1 Tbsp Powdered Peanut Butter (or to taste)
  • 1/4 Cup Mini Chocolate Chips ( carob or dark chocolate) (optional)

Instructions

  1. Fudge:
  2. Line 10 mini muffin tins with liners
  3. Mix together softened coconut oil, honey, peanut butter, vanilla extract
  4. Add powdered peanut butter and cacao powder
  5. Mix until there are no clumps of powder (will be thick)
  6. Spoon into liners filling 1/3-1/2 way up depending how big you want the fudge to be
  7. Freeze ~25 minutes
  8. While fudge is freezing mix together: greek yogurt and powdered peanut butter (I love the taste of the greek yogurt so I only used 1 Tbsp of powder but feel free to add LOTS more)
  9. Mix
  10. Take fudge out of freezer and fill the second half of liner with yogurt
  11. Top with mini chips
  12. Freeze ~1 hour
  13. ENJOY.

    1. It is very healthy. That’s why I made this blog, because I want to teach people that you can bake and make treats using healthy ingredients. If you could just take a moment and look at the ingredients you will come to see that nothing is what is usual in normal baking ingredients. In fact I bake and make treats a lot with vegetables.
