Breakfast Egg Muffins!!!!

Ingredients:

  • Liquid Egg Whites( or just separate egg from whites)
  • Mushrooms
  • Spinach( young works best or baby)
  • Tomatos (cherry tomatoes from Woolies -Rosa Italian)
  • Some mixed Italian blend spice ( Woolies), low sodium

Instructions

  1. Preheat oven to 180 degrees C
  2. Spray mini muffin tin with olive oil sprayer ( available at Spar or PIck n Pay)
  3. Chop desired veggies, ( you can add squash/zuccini) set aside
  4. Fill sprayed muffin tins half way with liquid egg whites
  5. Add veggies
  6. Bake for 25-30 minutes
  7. add spice
  8. Remove and enjoy!
